Repeat this a total of three times. This ensures that any oxygen that would attempt to get through the bag will have to follow a tortuous path through stainless steel, which readily absorbs it at high temperatures. So, the charcoal consumes the oxygen in the bag, and folding it up keeps the rest out, leaving a highly reducing environment inside the bag.
